Comfort Food For The Soul: Greek Bolognese Pasta

If you are into gluten free pasta, we think you'll love this Greek bolognese sauce with quinoa elbow pasta! It is in our weekly rotation..bonus because we can eat it with a spoon- and we love that!

Ingredients:

2lbs. of Grass Fed Ground Beef (can sub with Ground Turkey)

Avocado Oil Spray (enough to cover pan)

3/4 Jar of Diced Tomatoes (roasted garlic)

3-4 Spoonfuls of Crushed Tomatoes

1/2 Yellow Onion (chopped)

Kosher Salt

Black Pepper

Dried Spices:

Oregano

Basil

Parsley

Nutmeg

2 Cinnamon Sticks

2 Boxes of Banza Chickpea Elbow Pasta

Step 1

Spray the oil in the pan and turn the heat on to medium. Once hot, add the onion. Cook and stir the onion until it has become translucent.

Step 2

Add ground beef, a large pinch of salt and a few grindings of pepper. Crumble the meat with a fork, stir well and cook until the beef has lost its raw, red color.

Step 3 (we prefer this added step but it is not necessary)

Remove from stove and drain out most of the fat (liquid).

Step 4

Return to stove and add 3/4 jar of roasted garlic diced tomatoes (we love Bella Terra brand- they also have a garlic free version if you have allergies). Add 3-4 spoonfuls of crushed tomatoes (we love Jovial brand). Add the salt, pepper, oregano, basil, parsley, nutmeg and stir. Then add cinnamon sticks, cover and lower to simmer for about 25 minutes until done.

Step 5

Toss with cooked drained pasta and top with your choice of cheese or none at all (we try to limit dairy so we don't add any, and are still obsessed). Pair with your favorite red wine!
