We love soup any day of the week! This Chicken Soup is perfect when you’re under the weather or just in the mood to warm your soul.
Ingredients:
2 Whole Organic Chickens (skin removed)
1 Cup Indian Basmati White Rice
5 Large Organic Carrots
3 Organic Celery Stalks
1 Large Yellow Onion
4 Lemons (juiced)
Kosher Salt
Black Pepper
Step 1
Rinse and clean each chicken, then place each in a soup pot.
Fill each pot with water- enough to cover chicken.
Sprinkle some salt and pepper and heat on high, bringing it to a boil, then reduce heat to medium low to simmer for ~1 hour and 15 minutes (until chicken is cooked through and feels tender)
While you wait:
Step 2
Prepare vegetables:
Peel and chop carrots
Chop celery
Dice onion
Step 3
Once cooked, remove chickens with large forks and transfer to a cutting board.
Pour water from one pot into the other and remove fat with a strainer.
Add more water if needed, it should be ~1 inch from the top of the pot.
Turn heat on high and add salt and pepper.
Add vegetables and rice. Once boiling, reduce heat to medium low again.
While you wait:
Step 4
Once chicken has cooled enough, use forks to take all the meat off and start pulling it apart into small pieces with your hands.
Add salt and pepper to the finished chicken.
Step 5
Add the chicken and lemon to the pot with vegetables and rice.
Let simmer for another 7-10 minutes.
Enjoy with a nice piece of fresh bread or even pretzels!
