Cucumber Rose Collins

We are officially ready for summer! Yes it is a tad early, but it’s time. We have the perfect cocktail by Empress 1908 Gin + Bite Sized Studio to get you started. It is a fabulously pink twist on the traditional Tom Collins:

Ingredients:

1 1/2 oz Empress 1908 Gin

1/2 oz Lemon Juice

1/2 oz Honey Rose Syrup (recipe below*)

5 Cucumber Slices

Sparkling Water

Directions:

Add the cucumber slices, lemon juice, and honey rose syrup to a cocktail shaker and muddle. Add the Empress 1908 Gin and fill the shaker with ice. Shake to chill and combine, then strain into a glass with ice. Top with sparkling water and garnish with a cucumber ribbon or rose.

*FOR THE SYRUP:

Add 1/3 cup rosewater and 1/2 cup honey to a small saucepan over medium-low heat. Stir over heat for 2-3 minutes, until the honey has dissolved. Remove from heat and cool.
