Veggie Pasta

One of our FAV pasta meals! You can make it your own with your favorite veggies and whichever pasta you prefer- we love using either lentil or chickpea. It’s hearty, healthy and the perfect guilt-free pasta dish!

Ingredients:

Avocado Oil Spray (enough to cover pan)

3/4 Jar of Diced Tomatoes

3/4 Cup of Water

1/2 Red Onion (chopped)

1 Bunch of Organic Asparagus (diced)

1 Organic Zucchini (diced)

1/2 Red Bell Pepper (sliced)

2-3 Handfuls of Organic Spinach

Kosher Salt

Black Pepper

Dried Spices:

Oregano

Basil

Parsley

Nutmeg

2 Cinnamon Sticks

2 Boxes of Red Lentil Pasta (we love Tolerant brand rotini pasta)

Step 1

Spray the oil in the pan and turn the heat on to medium. Once hot, add the onion. Cook and stir the onion until it has become translucent.

Step 2

Add asparagus, zucchini, red pepper and spinach. Season with salt and pepper and continue to stir while vegetables cook, about 2 minutes.

Step 3

Add diced tomatoes, then the salt, pepper, oregano, basil, parsley, nutmeg and stir. Add water, stir, then add cinnamon sticks, cover and lower to simmer for about 20 minutes until done.

Step 4

Toss with cooked drained pasta and enjoy!
