Veggie Pizza
We've talked about the silver linings of COVID- well this veggie pizza is definitely one of them! We first discovered this Against the Grain pizza during the early days of Covid. There was so much uncertainty which led to stocking up on everything freezer-friendly! We came across this gluten free cheese pizza and decided to try it out. We created our veggie concoction and fell in LOVE!
Against the Grain prides themselves on high quality ingredients, with the milk and cheese coming from local farms. Their products are free from gluten, grains, gums, soy, corn and nuts!

Ingredients:
Against The Grain Cheese Pizza
Seasoning:
Sea Salt
Pepper
Basil
Parsley
Oregano
Red Pepper Flakes
1 Large Jalapeno Pepper (sliced)
¼ Red Onion (Thinly Sliced)
Pre Washed Spinach (~ A Handful)
Avocado Oil Spray
Step 1
Pre Heat Oven to 400°
We like to remove a little of the cheese from the top to start.
Sprinkle seasonings all over. We like flavor so don’t hold back!
Add sliced jalapeño pepper. Cover the entire pizza.
Place pizza in the oven straight onto the rack for the best crust.
Let pizza bake for about 15 minutes.
While you wait:
Step 2
Heat and spray a pan with the avocado oil.
Once hot, add the red onions, then stir and sauté until they start to caramelize.
Add the spinach, a pinch of sea salt, then sauté until wilted.
Remove from heat.
Step 3
Remove the pizza from the oven after 15 minutes.
Spread the sautéed vegetables over the entire pizza.
Place back in oven for another 3 minutes.
Remove the pizza and let cool for a couple of minutes before cutting.
We like to enjoy with a glass of Clasé Azul Tequila (obv), but red wine would also pair nicely! Enjoy!!
